The two most important factors for me, in a good bowl of udon, are: 1. chewy, tasty udon noodles, and 2. flavorful, spicy karashi. While this shop doesn't succeed at much--the broth is plain, the meat is average, the management (while quaint, needs to hire friendly and helpful staff) is slow and impersonal. However, the noodles are excellent--fresh, with the only-in-udon blend of tenderness and toughness. The karashi is oil-based (the only way to make outstanding karashi), and adds bite to an otherwise plain experience.
